Even before I went vegan I was never a fan of fish. I struggled with what to order at sushi restaurants. I always felt left out when all my friends were having cool colorful looking sushi rolls. After I went vegan I had the same issues struggling to find something I liked on the menu. I tried different vegetable rolls but just couldn’t get over the taste of the seaweed. One day I went out with my friend who worked at a sushi restaurant and she suggested I try a soy wrap. After that sushi became my favorite food.
I had never heard of a soy wrap before until then. For those who haven’t either it is basically a soy paper typically made from sesame seeds, soybeans, soy flour, soybean oil, rice syrup, and food coloring. The paper doesnt have much of a flavor at all and if you are someone who doesnt like the taste of seaweed it is a great alternative.
After my new discovery of the soy wrap I tried different vegetable rolls until I found my favorite. The avocado cucumber roll with lemon on top. It is the perfect light and refreshing roll. I ate it for weeks straight after I first discovered it. My local sushi restaurant evennamed the roll after me! Many of my friends tried it and also fell in love with it. It is great if you want something light and a great alternative for vegans.
How to order: ask for an avocado cucumber roll, sub seaweed with soy wrap (optional), add lemon on top. *I always ask for extra ginger and tamari on the side
